L’idea nasce dalle ‘perose’ della Sandra (Salerno, ndr), ‘vecchie’, ma anche cool come se niente fosse. Un po’ dolci, ma anche un po’ salate e, comunque sia, degna chiusura del menu ‘alla sottiletta’ orchestrato appena qualche giorno fa. :)) Stè perose della Sandra, ne ero curiosissima fin dall’incipit, quel giorno piantonavo letteralmente la creative-cook turinese, rubavo con gli occhi ogni più piccolo gesto sapiente e chiaramente, golosissima, non vedevo l’ora d’assaggiare! “Ohi Precy, assaggia un po’ stà perosa qui, ’spetta che ti dò la parte col formaggio neehh”. Rivelazione: mordere è stato un tutt’uno con l’impegno sacrosanto a rifarsele anche a casa, provando persino a giocarci un po’ intorno… eheheh, intanto, sulla questione involucro! Ma qui beh, più che di gioco, s’è trattato di mera contingenza pratica, della serie “chi ha visto in giro un sacchetto di carta fata“? Per cui diciamo subito che le perose originali andrebbero cotte in questi magici sacchetti very professional… ed io infatti, qui, aprivo il post dicendo “l’idea nasce da… “, ma poi s’arriva ad un cartoccio di banale carta argentata agevolmente rimediata in dispensa. Come se non bastasse, il resto è addirittura più immediato, si procede a strati: fettina di pera coscia, fettina di pane nero, preferibilmente di segale per una versione decisamente rustica (le perose di Sandra, tra l’altro, prevedevano il pain d’épices e quindi tutto dipende dal risultato che c’avete anche un po’ in mente voi, più o meno dolce, più dessert e meno antipasto o viceversa), formaggio di capra fresco e cremoso, aromatizzato con fili d’erba cipollina tagliuzzati grossolanamente, un rivolo di miele d’arancio, poca granella di pistacchi, una spolverata di pepe nero fresco di macina, un pizzico di fior di sale. Avanti così con gli strati fino ad esaurire le fettine di pera, s’impacchetta il tutto nella carta argentata e s’inforna a 200 gradi per 10-15 minuti (le pere dovranno ammorbidirsi, ma restare ancora croccanti). Sfornare e servire immediatamente.
