Da impacchettare e infilare nel cesto da picnic del lunedì di pasquetta. Asparagi e salmone, insieme, stanno benissimo… ancora meglio se accompagnati da qualche cucchiaiata di salsa olandese che, a scelta, potreste anche inserire nel composto da cuocere in padella (effetto cremoso rubato alla solita Monika del DiVino Winebar… e vi giuro che è da provare).
Diversamente, versate la salsa nella comoda ciotolina fai-da-te e la posizionate tronfia al centro della tavola (o della coperta da scampagnata all’aria aperta). :))
La ricetta semi-approssimativa
Eliminate la parte dura degli asparagi e lessateli in acqua leggermente salata. Scolate, lasciate intiepidire e tagliate a rondelle sottili (ovviamente, le punte vanno lasciate intere). Amalgamateli con delle uova sbattute (quanto basta a creare un composto piuttosto cremoso: per un mazzo di asparagi classico, circa 5 uova belle grandi). Tagliuzzate anche del salmone affumicato di buona qualità (quello di Ikea va benissimo:)) ed unitelo al composto con una macinata di pepe nero. Preparate la salsa olandese: sciogliete 100 g di burro (senza farlo friggere assolutamente) e, a parte, sbattete due tuorli d’uovo. Molto lentamente, versate il burro sui tuorli e montate con le fruste elettriche. Condite con una punta di sale ed il succo di un mezzo limone piccolo. Unite due cucchiai di salsa all’impasto della tortilla e cuocete il tutto in una padella antiaderente leggermente unta d’olio (per girarla aiutatevi con un piatto). Fate raffreddare e servite.

Ottima!! Mai provata l’accoppiata con gli asparagi ma il salmone mi piace assai! Ti seguo da tempo: da quando il tuo blog si chiamava mammachebuono e mi piacciono un sacco le tue ricette e come le racconti.
