Come si
può facilmente intuire… è una foto rubata. Direttamente dal tavolo di un gruppo di avventori del winebar… e visto che parliamo di amici ormai ampiamente fidelizzati, siamo al punto di chiedere anche uno scatto al volo. Guarda caso, io senza reflex e col telefonino scarico, Luigi che con le foto è veramente bravo… ma capita persino a lui di uscire senza i due chili di macchina fotografica professionale in borsa e quindi vabbè… foto improvvisata con quel che c’era e voi tutti dovrete fidarvi sulla parola. ;)) Idea di base rubata all’Osteria del 36 a Parma… ci sono stata di recente con un gruppo di blogger, subito dopo il Cibus Tour di cui si è detto in più riprese: pasta frolla sopra e sotto, pere succose appena-appena croccanti… e poi il cioccolato bianco semi fuso. Da svenimento. La grappa Traminer è stata una scelta estemporanea, giusto per dare un tocco di profumo intenso e destabilizzante… e poi perchè il bello di cucinare in luoghi che hanno un bar ed una cantina super attrezzati, per esempio, sta nel passare in rassegna le varie bottiglie e lanciarsi in esperimenti dettati, molto semplicemente, dalle voglie aromatiche del momento. Da provare signori miei! :))
Crostata di pere, cioccolato bianco e Grappa Traminer
per la pasta frolla:
400 g di farina 00
200 g di burro
200 g di zucchero
3 uova piuttosto grandi
1 pizzico di sale
1 pizzico di lievito per dolci
1 cucchiaio di Grappa (la più profumata che avete)
per farcire:
4 pere mature
2 cucchiai di zucchero
1 cucchiaio scarso di fecola di patate
1 cucchiaio di Grappa
200 g di cioccolato bianco di buona qualità
burro e farina per lo stampo
zucchero a velo per decorare
Impastate la farina con il burro tagliato a cubetti piccoli. Unite anche lo zucchero, le uova leggermente sbattute, la Grappa, il lievito setacciato ed il sale. Lavorate velocemente e raggruppate il tutto in un panetto liscio ed omogeneo. Appiattite con il palmo della mano, avvolgete nella pellicola da cucina e conservate in frigorifero per mezz’ora. Sbucciate le pere, tagliatele a fettine sottilissime (eliminate torsolo e semini) e mescolatele allo zucchero, la Grappa e la fecola setacciata. Riprendete la pasta frolla, dividetela in due parti, una leggermente più grande dell’altra. Stendetele formando due dischi spessi circa 3mm e, con il disco più grande, foderate la base e le pareti di uno stampo per crostata (diametro 26 cm), già imburrato e spolverato con la farina. Eliminate la pasta frolla in eccesso e praticate dei buchi sulla base utilizzando i rebbi di una forchetta. Farcite con le pere e tutto il loro condimento, spargete il cioccolato bianco in parte tritato ed in parte spezzettato grossolanamente e chiudete con il secondo disco di pasta frolla. Praticate dei forellini anche sul secondo disco di pasta, sigillate bene i bordi laterali e cuocete a 180 gradi per 45 minuti. Estraete e lasciate raffreddare completamente a temperatura ambiente. Servite, meglio se il giorno dopo, semplicemente con una spolverata di zucchero a velo.

Non è difficile crederti sulla parola, anche perchè già solo il nome del dolce è assai, ma proprio assai, invitante!
Pere e cioccolato poi è uno di quegli abbinamenti da sballo, anche se confeso di non aver mai deviato dall’uso del fondente extra!
Motivo in più per provare…copio e incollo all’istante ;-)
