Era da un po’ che non parlavo di ristoranti. Qualche riferimento accennato qua e là, ma la recensione tout court, in effetti, mancava da mesi. E la ragione esistenziale è: stavo cercando una formula mia. Per raccontare in maniera snella, evitando l’indugio sui sette milioni d’ingredienti à la carte… e mettendo a fuoco, più che altro, l’esperienza. Non l’ennesimo giudizio (della serie, echisenefrega), ma soprattutto una sensazione: perché da una parte c’é il dato oggettivo e quindi la qualità inopinabile da ricercare sempre e comunque, ma dall’altra ci sono io… molto protagoramente parlando, come misura relativa di tutte le cose. E quindi impatto, feeling e qualche immagine indicativa, perché ne resti impressa una qualche traccia, per ispirarsi in cucina nei tempi a venire… e per suggerire una chicca turistico-culinaria al viandante curioso e vivamente appassionato.
Con Il Focolare gioco in casa: ad Ischia ci sono nata e vissuta in pianta stabile fino a pochissimi anni fa. Di recente ho ripreso a viverla da lavoratrice pendolare (ihihih) e poi, di striscio, da turista che si gode il lato bello di un posticino incantevole. Ischia fa solitamente pensare al mare, ma vi assicuro che il lato montagna, anzi, il lato terra – come direbbe Riccardo D’Ambra, tenutario della trattoria – merita anche di più. Personalmente lo trovo addirittura mistico: silenzioso, rigenerante, pungolo per nuove riflessioni esitenziali (chi sono, dove vado, come ci vado:)), questa trattoria immersa nei boschi inquadra perfettamente quel genius loci ingiuriato dai più… per farla breve, c’ho fatto un salto una decina di giorni fa, giusto per rinfrescare il ricordo.
E poi per fare due scatti con il mio giocattolino che, ovviamente, sta diventando la nuova malattia di casa (con tutte le applicazioni che ho scaricato, potrei smettere di respirare, mangiare e bere, tanto farebbe tutto lui! A proposito di foto, consigliatissime RetroCamera e PhotoWonder;)). Infine, per ricordarsi che al Focolare bisogna andarci sempre senza fretta, quando si ha voglia di lasciar fare agli altri… e quando si è predisposti ai racconti di vita vissuta. Racconti che, neanche a dirlo, sono strettamente legati all’essenzialità della gastronomia dell’isola (e dintorni). In trattoria ci lavora tutta la famiglia, una ciurma di ben otto figli assolutamente vocati alla ristorazione nella formula venite-che-vi-apriamo-le-porte-di-casa… mia raccomandazione sentitissima: divertitevi e respirate a pieni polmoni. ;))
A ristorante, come a casa, non opto quasi mai per un menu completo, se gli antipasti sono tanti e invitanti, adoro lanciarmi a capofitto nei famosi tremila assaggini e poi, a scelta, un primo oppure un secondo. Infine il dolce.
- crema di Parmigiano con tartufo e porcini;
- fagioli zampognari agli agrumi e crosta di pane;
- spiedini di maiale rosolati nel lardo, con panatura di pistacchi;
- spiedini di patate e spaghetti fritti (foto);
- frittelle di pasta cresciuta (foto);
- mezzanelli fatti in casa, impastati con le erbe (tunz’ e paparastielli: erbe spontanee del territorio, simil tarassaco), conditi con salsa di pecorino leggermente sporcata di pomodoro (foto).
- pan di mele: tortino di mele frullate, condito con lavanda e rosmarino e servito tiepido col gelato (foto).
