Come lo specchietto per le allodole: chi non sogna la ricetta della famosa patata perfetta? Oppure girandola al contrario, chi non vive, con frustrazione massima, il mito delle patate come-le-fanno-al-ristorante? Io ormai ci convivo… ogni volta che le scelgo come contorno fuori casa, ma pure alla rosticceria sotto casa, tanto per dire. Mangio e sento la croccantezza fuori, la morbidezza dentro, vabbè, sento anche parecchio unto tutt’intorno… e quindi la risposta so darmela anche da sola: intanto, condimento a iosa! C’è talmente tanto olio che a friggerle si sarebbero risparmiate un bel po’ di calorie (evviva il fritto, per carità… però è una questione di principio!:)) e poi azzardo il cattivissimo pensiero… penso che dietro le quinte s’insaporisca parecchio con intingoli grassosi e più o meno succulenti, residuati da arrosti, fondi di cottura vari… il che è ovviamente una gran genialata, ma noi meschini? E proprio quando stavi per rinunciare, assaggi la meravigliosa spadellata di tua zia e scopri che, intanto, non fa il classico ‘bollo’ (pochissimi minuti in acqua bollente per eliminare l’amido: passaggio che dovrebbe garantire la croccantezza… mia zia lo snobba tout court). Scopri pure che non le infila in forno, ma fa tutto direttamente in padella… ed è pronta a giurare che senza una valanga di ‘odori’, non varrebbe nemmeno la pena mangiarle. Convengo. :))
Come si preparano:
sbucciate le patate, tagliateli a cubetti piuttosto piccoli e delle stesse dimensioni; condite con salvia, rosmarino, aglio e peperoncino (tutto tritato grossolanamente tranne l’aglio: lasciatelo intero così che ognuno possa scegliere di eliminarlo); in una padella antiaderente, velate il fondo con dell’olio extravergine d’oliva, unite le patate e tutti gli odori, abbassate la fiamma al minimo e cuocete con il coperchio finchè risulteranno morbide (visto che sono a cubetti non ci metteranno molto, dopo i primi 15 minuti iniziate a controllare); date una mescolata di tanto in tanto, salate alla fine e, per terminare, scoperchiate, alzate la fiamma e date una veloce tostatura finale. Fatto.
