Pensi di preparare una semplice frittata (si chiama frittata, ma con piccoli accorgimenti assolutamente in uso a-casa-mia, diventa il classico piatto leggero e senza troppe pretese… adattissimo alla cena del lunedì:)) e ti ritrovi una cosina stuzzicante da morire, da segnare in agenda per feste easy con gli amici e per i miei amatissimi menu da happy-hour-golosi. :)) Liberamente tratte da una ricetta di Sale & Pepe di aprile (se ci stavate pensando, sponsorizzo sfacciatamente l’acquisto: questo mese, proprio un gran bel numero), io avevo della robiola, ma la ricetta originale prevede ricotta. E poi rucola e cicorietta di campo per fare la parte delle ‘erbette’… il tutto da servire con un’insalata fresca, magari arricchita da una manciata di frutta secca che fa sempre crunch. E volendola fare ancora più fashion, ogni fritattina allegramente sormontata da una cucchiaiata di formaggio cremoso ed una manciata di erbette saltate, tipo blinis. Io, molto più ruspante, le ho servite così come sono… senza dimenticare la parte in cui, quelle che avanzano, le usi per farcire il panino dell’ora di pranzo, yum.
Frittatine erbette e robiola
per 6 frittatine, circa 8 cm di diametro
4 uova
200 g di robiola (ricotta o altro formaggio fresco e cremoso)
1 mazzetto di erbette tritate grossolanamente (io, cicoria e rucola)
1 cucchiaio abbondante di Parmigiano grattugiato
1 spicchio d’aglio
1 cucchiaio d’olio extravergine d’oliva
1 pizzico di peperoncino tritato
sale
In una padella antiaderente, saltate le erbette tritate con aglio, olio e peperoncino (versate l’olio e, con della carta assorbente da cucina, spalmatelo sull’intera superficie della padella: vi basterà per tutte le fasi della ricetta). Eliminate l’aglio e mettete da parte. Battete le uova con i formaggi, unite anche le erbette ed un pizzico di sale. Nella padella di prima, cuocete il composto a cucchiaiate o magari in un’unica frittatona formato-famiglia. Buonissime a temperatura ambiente.
