Questa l’ho rubata dal menu di Roscioli! Ci capito sempre più spesso verso ora di pranzo, anche stavolta in compagnia di una dolce amichetta blogger… e non posso certo prendere tutto: la regola è che un piatto lo provo subito, gli altri tre-quattro (che pure m’ispiravano da morire:)) li segno in agenda e tanto, prima o poi, l’idea torna utile di sicuro. Ma stavolta il passo è stato persino più breve del solito: con l’uovo al tegamino, servito con la bottarga e la burrata cremosa, alla fine c’abbiamo cenato la sera stessa. Devo aggiungere, con massima soddisfazione e senza nemmeno starvi a tediare con i bastoncini di pizza bianca pucciati nel tuorlo ancora tremolante, etc etc… :))
Per il costo del piatto, beh, diciamo che alla fine ci si organizza ‘a proprio uso e consumo’. A farla proprio come vorrebbe Roscioli, ci andrebbero uovo di Paolo Parisi, bottarga di Cabras e burrata di Andria, ma è ovvio che non c’è nulla di tassativo, se non il fatto che dovrebbe essere una cenetta coccola… regolatevi un po’ voi. Soltanto tre ingredienti, serviti così come sono… direi che anche a scialare un po’, di sicuro non si farà male nessuno. Anzi! ;))
Per ogni commensale:
ungete una padella antiaderente, sgusciatevi un uovo e cuocetelo per pochi munuti (a me piace lasciare il tuorlo semi-crudo… che poi è anche più digeribile;)). Condite con del pepe nero macinato al momento (il sale non l’ho messo per niente), spargete delle scaglie di bottarga e servite con circa 100 g di burrata, un giro d’olio extravergine d’oliva a crudo e tranci di pane abbrustolito o di pizza bianca.
E per restare sul tema coccola-profonda, suggerirei anche un calice di Gewurztraminer Hofstatter del 2009… e poi mi fate sapè! :))
