Come sopravvivere ad un’afosa e lunga estate, senza la certezza della torta di mele a colazione? Quella morbida, alta, un po’ pastosa, con le fette di mele perfettamente incastonate, quella rassicurante coreografia che ti saluta al risveglio come nessuno nella vita potrebbe mai… ehvabbè, ci siamo svegliati poetici! Umida, ma che affetti e mangi al tovagliolo perchè al mattino non ci piacciono strane acrobazie mentali, poi il caffellatte bollente… e quindi l’idea era sostanzialmente questa: morbida, alta, pastosa e tutto il resto, ma piena zeppa di melone! E persino qualche pinolo sparso qua e là per ricordarci che, questa qui, non è mica la torta degli esotici che ogni tanto si ribellano, molto semplicemente sembrerebbe la cuginetta estiva della cara torta di mele, quella della nonna insomma. Freschissima sensazione quella delle fette di melone, davvero da rifare, rifare, rifare… un buon bicchierozzo di latte tassativamente freddo di frigorifero e avete fatto! :-)
Torta al melone
per uno stampo apribile da 24 cm
2 uova
150 g di zucchero
1 pizzico di sale
1 bicchiere di latte
130 g di burro fuso e tiepido
300 g di farina 00
1 bustina di lievito per dolci
1 limone non trattato
1 piccolo melone maturo
q.b. di burro e zucchero di canna per la superficie
q.b. di burro e pangrattato per lo stampo
Con una frusta elettrica, montate uova, zucchero e sale fino ad ottenere un composto gonfio e spumoso. Continuando a montare, unite anche il latte, il burro, il succo e la buccia grattugiata del limone ed infine la farina accuratamente setacciata con il lievito. Versate il tutto nello stampo imburrato e cosparso di pangrattato ed inserite fette sottili di melone (2-3 mm di spessore) creando una serie di cerchi concentrici, esattamente come si fa con la torta di mele. Sulla superficie del dolce, spargete una manciata di pinoli leggermente tostati e dello zucchero di canna (un cucchiaio andrà bene) e completate, quindi, con qualche fiocchetto di burro che si scioglierà in cottura. Infornate a 180 gradi (forno già caldo) per 30 minuti. Lasciate raffreddare completamente prima di sformare (sganciando semplicemente la parte laterale dello stampo) e servire…. e se vi fidate, lasciatela pure un’intera notte in frigorifero, secondo me acquista tantissimo!!! :-)
