E lasciamo stare se, all’origine, la ricetta apparterrebbe al forum Cucina.it (che, tra l’altro, non ho mai frequentato), ripresa poi dalla collega Panperfocaccia, quindi da Cucina&Gianduia, notata da tizio, riprodotta da caio… vabbè, un giro mediatico assolutamente infinito, ma alla fine conta chi te ne ha dato notizia, no? E quindi, per me, resterà la torta di Raffaella: la torta di benvenuto, fresca, golosa e, per finire, quella che non vedevo l’ora di rifare a casa (anche solo per una certa questione ricotta/farina lasciata in sospeso… poi vi dico:)). E volevo vedere che, per una volta, si poteva semplicemente aprire una rivista, copiare tranquillamente una ricetta, macchè: ciò che esce dal mio forno deve avere, come minimo, una storia allegra e travagliata, poi emotivamente sentita e magari affettivamente toccante, sennò non se ne fa nulla. Per cui mettetevi comodi e sorbitevi pure questa (il premio sarà una torta buonissima e che si prepara in un battibaleno: e scusate se è poco, ohhh): correva il mese ottobre 2009 (ottobre/novembre, suvvia, non siate troppo precisini), la sottoscritta aveva da poco trasferito armi e bagagli in quel di Monteverde (quartiere a nord sud di Roma, vicino Trastevere, ad un passo da Cristalli di Zucchero, a due da La gatta mangiona, avete presente no?:)) ed ecco che mi parte il famoso comitato di benvenuto di zona… nella fattispecie, l’amica Raffaella (già conosciuta per simpatiche vie traverse e, manco a dirlo, sempre intorno ad una tavola riccamente imbandita, ehvabbè) che, investita del grato compito di farmi velocemente ambientare nel quartiere, senza pensarci due volte mi scrive e mi fa: “ehi Precy, dobbiamo andare a prenderci un tè, ti porto dalle ragazze di Biutì“! Uhm, un centro estetico! Mumble mumble, ma che s’è messa in testa la Raffa, di farmi fare due massaggi rinvigorenti (sai com’è? Dopo il trasloco!) o magari una fichissima french manicure (mmmmmmmmm)? Ma ovviamente, a questo mondo, si fa sempre in tempo a tacere, lasciarsi guidare, consigliare docilmente… e quindi, ex post, nel caso capitaste in zona, sappiate che Biutì è un posto carinissimo, rilassante e molto curato, anche solo per prendersi un tè con le amiche! Dulcis in fundo, fanno pure degli ottimi dolci: quel giorno, tra le varie cosine, c’era appunto questa (tanto decantata) torta di ricotta, per cui noi abbiamo docilmente assaggiato, discusso (anche un po’ criticato, ma del resto la signorina l’aveva persino premesso: “ehm, avevo finito la ricotta e allora, per questa volta, ho aumentato la quantità di farina”! Sì vabbè, ma sei impazzita?! :))… tutto il resto è ormai parte di questo blog, per cui vai con la ricetta! :))
Torta di ricotta
per uno stampo apribile da 24 cm
500 g di ricotta setacciata
100 g di gocce di cioccolato fondente
150 g di zucchero
4 cucchiai scarsi di farina setacciata
4 uova medie
la buccia grattugiata di un limone non trattato
1 cucchiaio di uvetta (non l’ho messa)
1 pizzico di sale
1 cucchiaio di essenza naturale di vaniglia
Montare i tuorli con lo zucchero, unire la farina e la ricotta accuratamente setacciate, le gocce di cioccolato, la scorza del limone, la vaniglia, il sale e l’uvetta: dovrete ottenere un composto cremoso e privo di grumi (per esser sicura, ho dato anche qualche colpetto di mixer a immersione). Montare a neve gli albumi ed unirli accuratamente al composto. Imburrare ed infarinare lo stampo, versarvi il composto ed infornare a 170° per 50 minuti (dopo i primi 40 minuti, testare la cottura, nel mio caso era già pronta). Consiglio vivamente di lasciarla riposare per una notte in frigorifero! L’ho servita freddissima, con una composta di ribes rossi che preparate semplicemente così: pentolino, il succo di un limone ed una cottura dolcissima giusto per poter schiacciare i ribes (mooolto grossolanamente) con i rebbi di una forchetta… e avete fatto.
