E queste, bene o male, ve le avevo già proposte così. Golose e divertenti uova al pomodoro che però, per l’occasione, avrebbero detto ciaociao a fiamme e fornelli (almeno, per quanto riguarda la parte ’sugo’) e sarebbero magicamente riapparse così: con un look che fa pendant con le temperature elevate che c’attanagliano, senza dimenticare la voglia fisiologica di cibi stuzzicanti, leggeri e profumatissimi. Il 95% di ciò che metto a tavola al momento sa tremendamente di basilico, e nella statistica rientra di diritto anche il piatto di oggi: una valanga di pomodorini dolcissimi lasciati marinare almeno un’ora, uno di quei sughetti (crudi) assolutamente da p-a-u-r-a… perfetto per condirci anche un’insalata di pasta (la prima cosa che m’è passata per la testa), ma magari vi lascio la ricetta va!!! :-)
Uova alla pizzaiola ‘cruda’
Lavate ed asciugate con cura dei pomodorini tipo ciliegino, tagliateli a pezzetti e conditeli con olio extravergine d’oliva (abbondate), sale, pepe, uno o due spicchi d’aglio sbucciati e tagliati a metà, tanto basilico fresco spezzettato: mescolate con cura, coprite e conservate al fresco per almeno un’ora. Rompete una o due uova in una padella antiaderente (leggermente unta) e lasciate cuocere a fiamma dolce. Quando tuorlo e albume risulteranno rappresi (lasciate il tuorlo ancora un po’ morbido), spegnete la fiamma, salate e pepate con moderazione, coprite l’albume con fettine sottilissime di mozzarella (preferibilmente del giorno prima… così da averla più asciutta) e ricoprite il tutto con i pomodorini conditi. Sollevate l’uovo aiutandovi con una paletta, sistemate su di un piatto da portata e con un cucchiaio prelevate eventuali pomodorini e sughetto rimasti in padella. Irrorate bene il tutto e servite appena tiepido con fette di pane casareccio.
