Si potrebbe anche dire, zucchine marinate versione maggio 2010. Anche perchè piccolissime davvero le differenze con quelle marinate nello scorso 2009, in primis l’aroma di turno, qui del timo fresco prelevato direttamente dalla neonata piantina del balcone della cucina, e va bene che la zucchina chiamerebbe la menta come la Marilyn lo Chanel, ma la variazione sul tema diciamo che ci sta. Con il senno di poi, l’esperimento (zucchine al timo) c’è tutto sommato piaciuto, la croccantezza è quella solita, un profumo da inebriarti tutti e cinque i sensi ancor prima d’assaggiare, infine un gusto magari pocopoco inaspettato, sicuramente stuzzicante, molto. E per chi ci bada, in questa ricetta qui mancherebbe l’aceto, si marina semplicemente con il limone (esattamente come fanno quelli del Bon Appetit Magazine), tocco finale… una pioggia di morbide palline di robiola buonissima e se trovate per caso quella di Roccaverano, ehbbè, siete decisamente al top. Ne viene fuori un (quasi) piatto unico assolutamente perfetto per tutti gli antipasti estivi che verranno, basterà andarci giù con una/due fettine di pane nero, magari leggermente tostato e se l’olio è quello buono, madunnina, una goduria non da poco… s’era capito no?! :))
Carpaccio di zucchine alla robiola
Lavate ed asciugate le zucchine, eliminate le estremità ed affettatele a rondelle sottilissime. Sistematele su di un piatto, formando un unico strato, ed irroratele completamente con un’emulsione a base di succo di limone ed olio extravergine d’oliva (in parti uguali), sale, pepe e timo fresco tritato. Coprite con della pellicola trasparente e lasciate riposare in frigorifero per un’ora prima di servire… con un ulteriore giro d’olio, la robiola freschissima spezzettata direttamente sulle zucchine e del pane leggermente abbrustolito.

Anche io una volta ho fatto le zucchine con il timo invece che con la menta e mi è piaciuto.
ps. ho fatto il tuo cous cous è venuto ottimo, solo che la salsa rimaneva granulosa allora jo dato una botta di minipimer ed ho risolto! HIHIHIHI! :)))
