Ricetta rubata! Dall’amica Isabella della cantina Castrocielo (la stessa degli aperi-cena a tema regionale… a proposito ricevuto l’invito per martedì 30?:)), quella volta che di sabato mattina (no dico, di sabato mattina!) cercavamo di raggiungere la location di turno (per il servizio di chef-at-home di turno) sfidando davvero la sfiga più nera, ben tre ore di coda sul raccordo… in compenso, tanto tempo prezioso per discorrere amabilmente sulle cose della vita! E tra le varie cosine, ci sarebbe scappata questa: ancora un meraviglioso ‘assemblaggio’ di materie prime eccellenti, tocchi sapienti qua e là… e magari tenete in caldo (anzi, al fresco) per il pranzo, la cena, fate un po’ voi! :))
Carpaccio di pecorino
Emulsionate olio extravergine d’oliva, aceto balsamico (qui si va un po’ a gusto personale, solitamente metto l’olio in quantità doppia rispetto all’aceto), poco sale e pepe. Con un pelapatate, affettate del pecorino toscano semi stagionato (io, uno splendido esemplare Villaneto) e sistemate il tutto su di un piatto da portata, irrorate con l’emulsione. Coprite con della rucola ben lavata ed asciugata ed irrorate ancora. Decorate con delle sottilissime fettine di pera piuttosto soda, irrorate, aggiungete dell’uvetta (fatta rinvenire in acqua tiepida), completate con un giro d’olio e servite. Oppure, coprite con della pellicola e conservate al fresco (ovviamente parliamo di una preparazione da consumare il prima possibile).
