Crostata di visciole e ricotta
per la frolla:
400 g di farina
200 g di zucchero
200 g di burro
4 uova, solo i tuorli
scorza di limone
sale
Preparare la frolla con gli ingredienti sopra elencati, farla riposare.
per il ripieno:
400 g di ricotta romana di pecora
140 g di zucchero
2 uova
2 cucchiai di sambuca o rum , a piacere
1 barattolo di confettura di visciole, 350 g circa
Mescolare insieme tutti gli ingredienti per la crema di ricotta fino ad ottenere una crema perfettamente liscia. Con parte della pasta frolla rivestire il fondo e i bordi di una tortiera (diametro 26 cm), fare uno strato di confettura quindi versarvi sopra la crema di ricotta. Con la pasta rimasta ricavare, con l’aiuto di una rotella dentellata, le strisce per la copertura. Far cuocere la torta in forno a 170°C per circa 1 ora quindi aspettare che sia ben fredda prima di tagliarla e servirla spolverata di zucchero a velo.
