La torta di riso della zia Lisina
stampo rettangolare da sei porzioni
100 g di riso arborio
100 g di mandorle spellate
100 g di cedro candito
100 g di amaretti
200 g d zucchero
5 uova medie
1 bacca di vaniglia
1 pizzico di sale
acqua di fiori d’arancio
essenza naturale di mandorla amara
un liquore a scelta tipo Amaretto di Saronno
zucchero a velo per lo stampo
Cuocere il riso nel latte per circa venti minuti. Intanto, con l’aiuto di un mixer da cucina, frullare il cedro con lo zucchero, unire anche le mandorle (ridurle ad una polvere finissima), gli amaretti, il sale e la polpa interna della bacca di vaniglia. Unire il tutto al riso cotto, sbattere anche le uova ed incorporarle al composto. Mescolare accuratamente per evitare la formazione di grumi. Spolverizzare lo stampo con lo zucchero a velo (sia sulla base che sui lati), versarvi il composto e cuocere a 160 gradi per circa un’ora (farà fede la prova stuzzicadenti, inserendolo al centro del dolce deve uscire asciutto). Intanto preparare una bagna unendo 4 cucchiai di acqua di fiori d’arancio, 2 di essenza di mandorla amara e 2 di liquore. Estrarre la torta dal forno, bucherellarla interamente con uno stuzzicadenti, irrorare con la bagna preparata (nel caso non fosse sufficiente, imcrementare pure la dose secondo i propri gusti) e lasciar riposare al fresco per un intero giorno prima di servire.
La chicca: per chi volesse approfondire il concetto “ma chi sarà mai stà zia Lisina?” oppure “mica lo sapevo che Precy avesse parenti a Bologna, ecc ecc”… eheheh, facciamo che zia Lisina è decisamente la zia di tutti e per vederla in azione (lol!) cliccare qui. :))
