Ultimamente sarei andata leggermente in fissa con il miele (anzi a proposito, ari-grazie Elisa), tipo che se le persone normali accompagnano il cibo con del pane, bè, io al momento vado rigorosamente di miele. E per intingerci praticamente di tutto, dal tocchetto di parmigiano, al lardo di colonnata, poi la fettina di pane tostato, passando per qualche gheriglio di noce (e mi dicevano di provare anche con le mandorle, le nocciole… solo che io due mani c’ho!). E poi vabbè, sarà anche un po’ il natale, sarà la voglia recondita di susamielli (che sarebbero, poco poco, i cugini partenopei dei gingerbread man, ovviamente molto più in carne, ma del resto sò pur sempre napoletani), sarà che è giustamente il momento propizio per abbandonarsi alle ricette più ‘appiccicose’ che ci siano, per l’appunto, sarà pure che avevamo quasi fatto tardi al corso di cucina pur di passare al volo da Castroni e fare la spesa dedicata a questo cake, bè, a meno che il mini-market sotto casa non venda anche zenzero sotto sciroppo, golden syrup, zucchero muscovado scuro (e pure quello chiaro… argh, diavolo d’un Jamie), insomma, in parole povere, stò cake s’aveva da fare! E dicevamo anche della necessità di star lì ad appiccicarsi anche un po’ la vita con un qualcosa di deliziosamente goloso e quindi perchè non pensare anche alla pausa colazione/teatime?! A dirla tutta, non credo che in materia d’appiccicaticcio esista altro popolo a saperla lunga quanto gli inglesi, devo per caso citare anche i colleghi melassa e sciroppo d’acero?! Giustappunto, qui l’anagrafica completa sarebbe sticky double ginger cake, sticky sta appunto per appiccicoso, ginger è, bè, lo zenzero, doppio perchè viene utilizzato sia a pezzettoni (sotto sciroppo) che in versione macinata… un cake profumatissimo, bello ricco di elementi dolci, ma non per questo stucchevole (e giuro, è stata una specie di rivelazione, che già mi saliva il diabete solo al pensiero)! Ultimissima per chi ci bada: eventually, fate tutto col semplice mixer, un unico marchingegno da sporcare (e quindi da lavare), praticissimo ed anzi, come sempre più spesso accade, molto più lunga a dirsi che a farsi!!! :-)
Dolce al doppio zenzero
(Sticky double ginger cake, ricetta di Jamie Oliver)
8 pezzi di zenzero sotto sciroppo ben sgocciolati
(mettere da parte 4 cucchiai di sciroppo)
150 g di burro a temperatura ambiente
200 g di golden syrup
100 g di zucchero muscovado scuro
250 g di farina autolievitante
1 cucchiaio di zenzero macinato
1 cucchiaino di cannella macinata
2 uova
200 ml di latte
100 g di zucchero muscovado chiaro
Preriscaldate il forno a 180 gradi (potenza 4 in forno a gas). In un mixer, tritate finemente i pezzi di zenzero e, continuando a frullare, unite anche il burro, il golden syrup, lo zucchero muscovado scuro e 4 cucchiai di sciroppo di zenzero. Frullate fino ad ottenere una massa chiara e cremosa. Aggiungete quindi la farina e le spezie e frullate ancora. Unite infine le uova ed il latte e, continuando a frullare, amalgamate bene il tutto. Versate l’impasto in uno stampo di 20 cm di diametro oppure in uno per plumcake di 2o x 10, foderato con carta da forno. Posiazionate lo stampo nella parte bassa del forno e cuocete per 50 minuti. Verificate la cottura infilando uno stuzzicadente al centro del dolce (dovrà uscirne pulito), nel caso proseguite la cottura. Potrebbero volerci fino a venti minuti aggiuntivi, se la superficie dovesse colorirsi troppo, coprite con un foglio di carta argentata. Una volta cotto, etsraete dal forno e lasciate raffreddare completamete (meglio se per una notte intera) prima di sformare e servire.
