A parte il fatto che sarebbe pur sempre lunedì, ci sarebbe anche la questione del rientro in tarda serata, sempre il solito isolotto natio e sempre la nostra solita toccata e fuga (ma vabbè, quando il papà chiama! a proposito, auguriauguriauguri!:-)). Che poi, sempre a fare le vittime predestinate di questo sporco, triste mondo e invece, mangiato benissimo, visti tutti i parenti, coccole e bacini sparsi, ma la contropartita di tutto ciò, signori miei, è sempre e comunque lei! L’imprescindibile traversata transoceanica che, sarà che sono ormai 32 anni che vado di rollio e beccheggio (ah, frequentato velisti, si sente?), in tutta onestà, finirò davvero per non reggerla proprio più (ma nooo mamma, tranquilla che torno :-)). Per cui, causa assenza di lucidità necessaria (e se ci penso, avrei anche un tantino sonno), mi sa tanto che finiremo per adeguarci all’attualissimo less is more e quindi due parole, ma davvero due, sul soggettino del giorno che, di base, sarebbe ancora una ricetta della solita Ady (e quando si parla di ciambelle) “ma so fare anche altro eh!” :-). Quindi ricotta e niente burro/olio, per cui mi sa che (finalmente!) abbiamo prodotto un qualcosa di tutto sommato leggero (ehm, nel caso aveste da smaltire una certa cena, grandi festeggiamenti, ecc ecc). Consistenza morbidissima, al contempo piacevolmente densa, non di quelle sbriciolosissime insomma (poi, non so voi, ma qui preferiamo di gran lunga il genere ‘un filo più sodo’, il che non significa secco, ma questa è una lunga storia! magari un giorno ve la racconto). Di mio, l’uso di una profumatissima sambuca (ndr: anice stellato al ciiento pe’ ciiento!) sempre perchè “i liquori non li bevo nemmeno se m’ammazzano, però li uso spessissimo per farci i dolci‘. E pure con grande soddisfazione. Poi le noci: effetto rustico, se vogliamo anche un po’ granuloso, il che con la ricotta sta esattamente come lo Chanel n°5 alla Marylin (di turno:-)). Secondo me. Del cioccolato fondente grattugiato (molto poco) delicatamente in tutto l’insieme e abbiamo fatto.
Ciambella all’anice con noci e ricotta
3 uova
200 g di zucchero
250 g di ricotta
100 g di noci finemente tritate
200 g di farina 00
1 bustina di lievito per dolci
50 g di cioccolato fondente
5 cucchiai abbondanti di sambuca
1 pizzico di sale
Montate le uova con un pizzico di sale e lo zucchero fino a farle diventare spumose (pref. fruste elettriche, alla massima velocità, per 15 minuti). Unite la ricotta passata al setaccio e le noci finemente tritate. Incorporate anche la farina setacciata con il lievito, il cioccolato grattugiato ed infine il liquore. Versate in uno stampo a ciambella di 22 cm di diametro, ben imburrato ed infarinato e cuocete in forno già caldo a 180 gradi per 35 minuti.
