Di nuovo alla base! Colore vagamente ambrato (intendo, la sottoscritta) e svariate verdurine/ortaggi locali da consumare nei prossimi giorni. In primis, patate, fagiolini, pomodori… per esempio, per farci la più classica delle insalatone contadine delle mie parti.Un’insalata che da sempre è simbolo di convivialità, il premio che t’arriva festoso dopo una dura giornata di lavoro nei campi: è il momento di celebrare i frutti del raccolto, la terra… e la vita.
Quanto al piatto, più che altro, una sequenza di passi da raccontare: fagiolini spuntati, lessati in acqua leggermente salata (per mantenere il colore verde brillante, cuoceteli senza coperchio e, soprattutto, raffreddateli immediatamente immergendoli in acqua e ghiaccio); patate lessate con la buccia in acqua leggermente salata, lasciate raffreddare, sbucciate e tagliate a pezzi non troppo piccoli; pomodorini dolci tagliati a metà, poche foglie di lattuga, olive verdi, sedano a tocchetti (ed anche una manciata di foglie), sottilissime rondelle di cipollotto fresco, peperoncini verdi a pezzetti e, se piace, anche del tonno in scatola; olio extravergine d’oliva, sale, pepe e basilico fresco. Del buon vino bianco, freddo… e tutti a tavola!
