Spiego: va bene che ieri siamo stati al fastfood (perchè il cuginetto in vacanza-premio proprio non voleva sentir ragioni!), sì bè, steakhouse, mettetela un po’ come volete… il punto è: ci saremmo, mica, lasciati (appena appena) influenzare?! Vabbè dai, intanto ve la butto lì: ideuzza a dir poco appetitosa, magari anche per riciclare quella mozzarella che, dopo due giorni di frigo, proprio non vuole saperne di tirar fuori una sola goccia di latte. Ricetta volante, salva umore, con tanto di collegamento culinar-filologico: ehbbè sì, per la storia della mozzarella che va a braccetto col limone! Devo per caso ricordare che Jamie Oliver c’insegna (sissì, lo insegna giusto a noi) che i limoni di Amalfi, con la mozzarella di bufala, sono davvero un qualcosa d’incontenibile?! E che Viviana Lapertosa, il limone, lo aggiunge direttamente alla panatura… ne avevamo già parlato no?! Bene, ovviamente il risultato c’era piaciuto parecchio, con la mozzarella c’è piaciuto anche di più (ndr: tutt’una serie di piacevolissimi picchi sensoriali tendenti all’acidulo, provareprovareprovare) e con questo, scappo. Un po’ presa.
Per la preparazione: tagliate la mozzarella (non freschissima e ben sgocciolata) a bastoncini oppure a fette spesse un dito; passate il tutto nella farina, quindi nell’uovo sbattuto ed infine nel pangrattato aromatizzato con della buccia di limone finemente tritata. Eventualmente, ripetete il passaggio uovo-pangrattato ;-) . Scaldate dell’olio d’oliva e friggete pochi pezzi per volta, circa due minuti per lato. Lasciate sgocciolare su carta assorbente da cucina, salate e servite immediatamente.
