Me la sono presa comoda, lo ammetto. Zucchine (qui, marinate a crudo) e gamberetti. Abbinamento stra-stragettonato dai ristoratori di un po’ tutte le categorie (ma sììì), solitamente, come primo piatto. Per riadattarlo alle nostre necessità, fuori la pasta e dentro la focaccina. Poi lo speck… che con la famiglia-gamberi, sembrerebbe vantare una sorta di attinenza conclamata! Potremmo dire che lo speck sta alle zucchine, come le zucchine ai gamberi… e lo speck con le zucchine, come ci sta? :-) Altro primo piatto stra-stragettonato etc etc… l’ho detto subito che me l’ero presa comoda (si fa per dire eh?! in realtà, grande lavorio cerebrale, rischio di fusione sinaptica… notato il livello del termometro in questi giorni?!). E per legare il tutto, uno velo di quark (con la sua lieve punta di acidità), aromatizzato con poca buccia di lime e qualche filo d’erba cipollina. Che volessi contrastare un po’ la dolcezza del gamberetto?! Vabbè, collegamenti stra-stragettonati a parte (un panino anche un po’… uhm, si potrà dire ‘populista’ sotto le elezioni?), ci sarebbe anche il riferimento ad un certo concorso per paninari incalliti! Ovvio no?! Tutta la storia di ieri sul panino della Ricci, il titolo del post di oggi altamente indicativo… niente è affidato al caso, credetemi :-)

Focaccine ai gamberetti, con speck,
zucchine marinate e quark all’erba cipollina
per ogni focaccina:
(dosi piuttosto approssimative, si va molto a gusto personale)
Aprire la focaccina in senso orizzontale e spalmarne una metà con un cucchiaio abbondante di quark (già aromatizzato con qualche filo d’erba cipollina tritato e poca buccia di lime); continuare con una fettina di speck, tagliata leggermente più spessa del normale (si consiglia vivamente la scelta di uno speck di qualità, del tipo umido e morbido). Coprire con delle rondelle di zucchine (già marinate per almeno 6 ore in olio extravergine d’oliva, succo di limone, aceto, sale, pepe, aglio, basilico e menta) e completare con 1 pizzico di fior di sale ed una macinata di pepe. Richiudere sovrapponendo la parte superiore della focaccina e servire… magari con un bel calice di prosecco :-)
