Taccole, riso e vitello in stile thai
per due persone:
150 g di taccole
100 g di riso a grano lungo*
*(basmati, jasmine oppure venere… come ho fatto io!)
200 g di polpa di vitello in tocchetti piuttosto grossi
1 manciata di semi di sesamo
1 cipollotto fresco affettato sottile
1 cucchiaino di coriandolo fresco tritato
1/2 cucchiaino di quattro-spezie**
**miscela già pronta a base di cannella, zenzero, noce moscata e chiodi di garofano
2 cucchiai di salsa di soia
2 cucchiai di salsa di pesce***
***nuoc mam, garum oppure colatura di alici :-)
2 cucchiaio di latte di cocco
2 cucchiai di olio di sesamo
2 cucchiai d’olio d’oliva
1 cucchiaino di zucchero
1 manciata di anacardi tostati
fior di sale
pepe
Preparate una salsina con 1 cucchiaio di salsa di soia, 1 cucchiaio di latte di cocco, 1 cucchiaio di salsa di pesce, 1 cucchiaio di olio d’oliva e lo zucchero: unite la carne, mescolate con cura, coprite e lasciate insaporire per circa mezz’ora. Spuntate leggermente le taccole e cuocetele in acqua bollente, salata, per 5 minuti (devono restare piuttosto croccanti). Sollevatele, quindi, con una schiumarola (oppure un mestolo forato) ed immergetele direttamente in una ciotola con acqua e cubetti di ghiaccio. Lessate anche il riso (già sciacquato più volte in acqua fredda) riducendo leggermente i tempi di cottura indicati sulla confezione. Quindi, scolatelo e passatelo sotto un getto d’acqua fredda per fermarne la cottura. In una padella antiaderente (ancora meglio, nel wok), riscaldate l’olio di sesamo, tostatevi i semi, unite anche il cipollotto e, quindi, la carne (senza sgocciolarla troppo dalla salsina). Rosolate velocemente, il tanto che basta a sigillare la superficie esterna dei tocchetti di carne. Unite anche il riso e le taccole ed insaporite bene il tutto. Versate in un’insalatiera. A parte, preparate il condimento con 1 cucchiaio di salsa di soia, 1 cucchiaio di latte di cocco, 1 cucchiaio di salsa di pesce, 1 cucchiaio di olio d’oliva, le spezie ed un pizzico di pepe, emulsionate con cura e versate nell’insalatiera. Mescolate il tutto. Completate con una manciata di anacardi tostati, un pizzico di fior di sale e servite.
