Ancora le uova di Paolo Parisi!
Ancora perchè… praticamente, è da quando le ho,
qui, in frigo che continuo
a sentirne parlare. Per quanto mi riguarda, ero a dir poco
ansiosa (e curiosa) d’assaggiarle:
e che saranno mai, alla fine… sono pur sempre uova! Ed è esattamente a questo punto che
(di solito) parte la dissertazione sul
‘non tutte le uova sono uguali’ e, soprattutto, sul fatto che
‘il prezzo di un prodotto (non sempre, ma spessissimo), ahimè, la dice lunga sulla qualità’. Ed è inevitabile! In ogni caso, vi ho
sparso in giro un po’ di
link per cui, se vorrete approfondire, troverete tutto quanto c’è da sapere. Io sono troppo
occupata a
gioire visto che, finalmente, dopo le
uova che mi regalava occasionalmente la
nonna… quelle delle galline di sua
cugina etc etc (
giri vorticosi per riuscire a mangiare un ovetto buono!) e dopo una serie di
tentativi con tanto di marchio
bio (a volte mi sento un po’ Babe che va in città!)… niente, quel
gusto lì non riuscivo proprio a ritrovarlo. Il sapore dell’uovo. Fresco. Poi è arrivato
Paolo Parisi ed il resto della
storia potete immaginarlo da soli :-) sicuramente non le utilizzerò per
farci dolci,
tortini & co., le riserverò gelosamente per quelle
occasioni in cui…
va in scena l’uovo! Per esempio: avete mai mangiato un (buon)
ovetto a colazione, rassodato, ma non troppo (
il tuorlo deve restare vagamente liquido), con sopra un pizzico di
fior di sale ed un ricciolo di
burro (
Occelli, ci risiamo coi vizi, lo so)? Io no!!! A colazione, non riuscirei davvero a farcela… diciamo che è più
roba da
tedeschi ecco :-) però
mi son tenuta l’idea per dei
pranzetti frugali, magari con una buona
insalatina fresca! Invece, per tutti voi… rullo di tamburi (
che stia diventando un filino plateale)… siamo andati appositamente a
recuperare questa
ricetta carinissima di
Camille Le Foll. Che non è una
cuoca, bensì una
giornalista.
Solo che ha le nonne brave ai fornelli e c’ha scritto un libro, si chiama
Crepes, pancakes, blinis… e tra le varie idee parecchio divertenti
(semplici, ma divertenti), mi stuzzicava
questa che
lei chiama
, appunto, focaccia
(
ma niente a che vedere con le note focacce alte e mollicose) e che, in realtà, è una sorta di
pancake di grano saraceno (
che adoro!). Molto
all’americana, si prosegue con una golosissima farcitura a base di prosciutto
(ma anche dell’altro) e, chiaramente, di uova (
però, qui, ho fregato tutti e le ho scelte italianissime!!!). E pensavo fosse l’idea giusta
(magari anche un po’insolita) per proporre questi gioiellini qui
(la cottura delle uova è davvero minima)! Insomma, se
uno vuole
giustappunto sentirne il
sapore…
Sbattete l’uovo con 2 bicchieri d’acqua. In una terrina versate a fontana la farina ed il sale e fate un pozzetto al centro. Incorporate a poco a poco l’uovo sbattuto, mescolando accuratamente. Aggiungete acqua in quantità necessaria per ottenere un impasto fluido e liscio. Lasciate riposare per almeno un’ora in modo che il grano saraceno acquisti la giusta densità; nel caso, allungate con un po’ d’acqua. Scaldate una padella antiaderente o una crepiere (non troppo larga) unta al suo interno e versateci un mestolo d’impasto. Stendetelo molto rapidamente con l’apposito rastrellino di legno in modo che raggiunga i bordi della padella e lasciate cuocere finchè non inizia a staccarsi dai bordi (ci vorrà pochissimo!). Girate la focaccia con l’aiuto di una spatola, imburratela, disponetevi al centro la fetta di prosciutto, cospargete di emmental grattugiato ed, infine, rompete sopra l’uovo, cercando di lasciare il tuorlo intero. Salate e pepate quest’ultimo. Quando l’albume diventa latteo, ripiegate i bordi della focaccia verso il centro in modo che, a vista, rimanga solo il tuorlo. Cospargete di fiocchetti di burro e servite subito.
