… non bè, proprio beeeeeeeee: signore e signori, pesto (al prosciutto) di pecora!!! Tadaaaaaan!!! Dunque, spieghiamo meglio… qualche giorno fa, la signora qui ci fa un invito (o una minaccia?!): ehi bloggers, che ne dite di prepararmi un pesto?! Scegliete voi gli ingredienti, ma createmi qualcosa di fantasioso per la raccolta pestosa, please!!! Agli ordini!!! Uhm, pensandoci, avrei il blog pieno, zeppo di pesto: pesto di basilico, pesto di erbe, pesto di melanzane, di zucchine, bastaaaa… stavolta volevo proprio qualcosa di diverso, soprattutto per me stessa!!! E poi, avevo voglia di qualcosa che fosse un po’ più stagionale (le pecore sarebbero autunnali? ovviamente no! parlo del gusto, caldo, avvolgente, rotondo…)! Quanto al prosciutto di pecora, inizialmente, sembrerebbe di aver a che fare con una sorta di capocollo, ma non è così! Il gusto è talmente accattivante, speziato, selvatico, ricorda persino la ricotta di pecora, davvero da provare! La cremina incriminata, stavolta, è colata a cucchiaiate in una sorta di tortino di melanzane e rucola che… non è propriamente un clafoutis, nemmeno una parmigiana bianca, ma diciamo… una via di mezzo tra le due, per cui grazie, ancora una volta, per le ispirazioni inconsapevoli!!! Naturalmente, come ogni pesto che si rispetti, può essere utilizzato per farcire dei crostini, per arricchire altre preparazioni, per creare dei panini goduriosi, per un bel piatto di pasta (magari ci aggiungerei una fonduta di formaggio e abbondante rucola da cuocere per qualche secondo nell’ acqua della pasta)… e sulla pizza no?! A proposito, oggi (a mezzanotte) termina il Pizza Gourmet! Allora? Quanti di voi, oggi, mangiano pizza?!
Pesto tartufato al prosciutto di pecora
(dosi per circa 2 tazzine da caffè)
50 gr di Prosciutto di Pecora La Genuina
2 cucchiai di pecorino grattuggiato
1 cucchiaio di Parmigiano
1 rametto di rosmarino
1 rametto di timo
2 cucchiai di olio al tartufo
q.b. di pepe nero macinato al momento
q.b. di olio extravergine d’oliva
Passare al mixer tutti gli ingredienti elencati, aggiungendo gradualmente l’ olio extravergine d’oliva in modo da ottenere una crema fluida ed omogenea. Il prosciutto resterà un po’ a pezzettini, ma l’ effetto è proprio questo.
Per il tortino di melanzane, ho semplicemente grigliato delle fette sottili di melanzane per poi sistemarle all’ interno di una pirofila imburrata, alternandole a della rucola spezzettata, qualche pomodorino a pezzetti, uova sbattute con sale, pepe e ricotta di pecora e qualche cucchiaiata di pesto tartufato al prosciutto di pecora qua e là. Parmigiano grattuggiato per completare e forno a 180 gradi per circa mezz’ ora. Consiglio di servirlo appena tiepido!
