Ve l’ avevo detto che si trattava di una vera e propria saga, la storia infinita della “pasta e…”, altro che trilogia, qui si va ben oltre, v’ avverto! Ad ogni modo, le lenticchie sono state ampiamente apprezzate, ergo, mi precipito ad omaggiare quest’ altra delizia, my favourite: come già anticipato, il procedimento per questo tipo di minestre è sempre lo stesso, più o meno. Piccole variazioni sul tema che, ovviamente, non vanno trascurate… tipo che qui ci va il sedano, fondamentale, poi niente pomodorini, tutto rigorosamente in bianco e niente pasta mista, bensì deliziose pappardelle spezzate, così, con le mani, molto grossolanamente… il risultato, credetemi, è davvero fantastico, farete un figurone (oddio, sembro Jamie Oliver)! E, poi, il bello è che è così da generazioni, ebbene si, signori e signore: piatti storici… e non dite che non ve l’ avevo detto!!!
Minestra di pasta e ceci
per due persone
100 gr di ceci secchi
100 gr di pappardelle (spezzettate grossolanamente)
1 spicchio d’ aglio
1 costa di sedano
2 cucchiai d’ olio extravergine d’ oliva
1 L di brodo vegetale (circa)
q.b. di sale e pepe
Mettere a bagno i ceci per un’ intera notte, quindi sciacquarli accuratamente e cuocerli per circa un’ ora nel brodo vegetale (aggiungere il liquido gradualmente, in modo da non ritrovarsi con una preparazione finale troppo brodosa). A cottura ultimata, i ceci dovranno risultare morbidissimi, fin quasi a spappolarsi. Separatamente, preparare un soffritto con aglio, sedano a pezzettini ed olio, unirlo ai ceci ed insaporire il tutto. In pieno bollore, aggiungere anche la pasta (aggiungere del brodo solo se necessario, le pappardelle cuociono davvero molto in fretta ed il liquido non avrebbe il tempo di ridursi a sufficienza, mentre il risultato finale dovrà essere cremoso, denso, assolutamente non brodoso). Spegnere la fiamma quando la pasta è ancora al dente, correggere di sale e pepe e lasciar riposare per almeno venti minuti. Si serve con un filo d’olio crudo.
