Così, giusto per augurarvi buon weekend e nel caso dovesse venirvi voglia di una colazioncina sana e genuina, oppure di un té pomeridiano che ormai ci sta proprio tutto… vabbè, bando alle ciance: è stata lei a gettare l’ amo, io come sempre ho abboccato, da golosa e fedele estimatrice quale sono, ricadendo, per giunta, sul solito sacchettino di mandorle ammiccanti, sul confort della cannella, sul calore dell’ olio d’oliva… vado a fare colazione, ci si sente ok???!!!
Cake di carote e mandorle alla cannella
stampo da plumcake da 20 cm
180 gr di carote (già pulite)
100 gr di mandorle (spellate e tostate)
1 pezzetto di cannella
2 uova grandi
100 gr di zucchero
30 gr di olio d’oliva
50 gr di farina
50 gr di fecola
1 cucchiaio di lievito per dolci (abbondante)
1 pizzico di sale
In un mixer, tritare le carote, le mandorle e la cannella. Intanto, montare le uova con lo zucchero fino a farle triplicare di volume (min. 10 minuti). Con una frusta a mano, molto delicatamente, incorporare l’olio, il trito di carote e mandorle, il sale e le farine setacciate con il lievito. Versare il tutto in uno stampo imburrato e cosparso di pangrattato e cuocere a 180 gradi per 25-30 minuti.
Sformare e lasciar raffreddare su una gratella. Se piace, decorare con dello zucchero a velo.
