Involtini di melanzane e pesce spada
(per 4 persone)
2 melanzane grosse
1 trancio di pesce spada freschissimo da circa 300 gr
2 cucchiai di pinoli tostati
1 cucchiaio di uva sultanina
4 cucchiai di pecorino grattuggiato
2 cucchiai di pangrattato
1 mazzo di basilico
1 spicchio d’aglio piccolo
1 bicchiere di olio extravergine d’oliva
q.b. sale e pepe
Lavare e spuntare le melanzane, tagliarle a fette dello spessore di 0.5 cm e cuocerle sulla griglia calda finchè non risulteranno abbastanza morbide. Salare e mettere da parte. Tagliare il pesce spada a fettine. Sfogliare il basilico, lavarlo ed asciugarlo con cura. Su un piano da lavoro, allineare le melanzane a due a due in modo tale da avere una fetta più lunga (sovrapponendole un po’) ed adagiare su ognuna una fettina di spada. Distribuire sul pesce la metà dei pinoli, l’uva sultanina, 1 cucchiaio di pecorino ed il pangrattato. Insaportire melanzane e ripieno con una macinata di pepe ed un filo d’olio. Avvolgere le melanzane racchiudendo il ripieno in modo da ottenere degli involtini e compattarli un po’ con le mani. Appoggiarli su una placca e cuocere in forno a 250 gradi per 6 minuti. Sfornare e lasciar raffreddare coprendo il tutto con un foglio di carta alluminio. Frullare il basilico con l’aglio sbucciato (senza germoglio interno), l’olio ed i pinoli rimasti; aggiungere due cucchiai di pecorino e frullare fino ad ottenere una salsa fluida. Suddividere gli involtini nei piatti, cospargerli con un po’ di salsa e con il resto del formaggio e servire accompagnandoli con la salsa rimasta.
L’ideale è consumarli a tempertura ambiente!!!
