Devo sbrigarmi (
o piantarla) con questo tipo di post, l’estate è agli sgoccioli… ma se vi sbrigate, ce la fate a provarne ancora qualcuna! Per esempio questa qui, vagamente acidula, accompagnata da
fette di brioche abbrustolita… da rifare senz’ altro (l’ importante è annotarsela religiosamente sulla

copiaeincolla ): la sottoscritta ha dovuto fare a meno della trota affumicata, stendiamo un velo pietoso, quindi (
solito) salmone e direi che, tutto sommato, ci siamo tenuti sul genere! Ma… che fate ancora qui?! Di corsa a preparare l’ insalata che poi, magari, domani piove (seee, ma dove?!) e ci scappa il brodino! L’ avete notato? Metereologicamente parlando, ci facciamo influenzare molto più dal calendario che da quello che effettivamente si vede dalla finestra: gente strana, l’ ho sempre detto!
Insalata di trota affumicata, mele, sedano e vinaigrette di agrumi
trota affumicata 1 confezione
mela granny smith 1/2
sedano 2 coste
insalata mista (tenera)
arancia 1
limone 1
aceto di riso 2 cucchiai
olio d’oliva 2 cucchiai
fior di sale & pepe macinato
pepe rosa
Preparare la vinaigrette: spremere l’arancia e aggiungere al suo succo 1 cucchiaio di buccia di limone grattugiata, l’aceto di riso, l’olio, sale e pepe. Emulsionare il tutto con il mixer a immersione, per 5 secondi. Lavare il sedano e la mela e affettarli sottilmente. Fare a pezzetti il filetto di trota affumicata. Disporre l’insalata nei piatti, aggiungere la mela, il sedano e i pezzetti di trota e condire il tutto con la vinaigrette di agrumi, finire con poche bacche di pepe rosa e servire.
