La ricotta non è un formaggio, quindi non è cheesecake! Uhm, a guardarla bene… mi sarò mica avvicinata più al kasekuchen (tedesco, preparato con il quark)?! Mah, prendiamo questo post per quello che è, ovvero una segnalazione: la cheesecake di sola ricotta viene davvero buona (acqua calda???), se non amate il gusto deciso della philadelphia, provatela! Qualcosa di mooolto simile la trovate anche qui, personalmente ho provato a riadattare la (pluripremiata) cheesecake NewYorkStyle! Ma senza tirare in ballo la storia della leggerezza che, francamente, è alquanto fuori luogo, soprattutto se (come me) avete voglia di vedere come viene con la ricotta di bufala… l’ avevo detto di non tirare in ballo la storia della leggerezza! Per oggi è tutto, scappo a prendere l’ agendina nuova, si si, tipo diario della scuola! Buon inizio settimana/mese, buon inizio!
Cheesecake alla ricotta
per una teglia da 24-26 cm, con bordo amovibile
250 gr di biscotti digestive
120 gr di burro
750 gr di ricotta
300 gr di zucchero
10 gr di maizena
1 limone bio, tipo Amalfi
1 fialetta di essenza naturale di vaniglia
3 uova
3 tuorli d’ uovo
1 pizzico di sale
burro e pangrattato q.b. per lo stampo
frutti rossi q.b. per servire
Passate al mixer i biscotti riducendoli in polvere, unite il burro fuso e mescolate finché il composto sia omogeneo. Versatelo nello stampo (accuratamente imburrato e passato con del pangrattato) e premete con un cucchiaio creando una base compatta. Porre in frigorifero per 1 ora. Setacciare la ricotta e lavorarla con lo zucchero. Aggiungere la maizena (anch’ essa setacciata), la scorza del limone, l’ essenza di vaniglia, un pizzico di sale e mescolare. Quindi, aggiungere le uova intere, i tuorli uno alla volta ed il succo del limone. Versare il composto nella tortiera con il fondo di biscotti e infornare a 200° per 10 minuti; abbassare, quindi, a 160° e proseguire la cottura per circa 45 minuti. Lasciar raffreddare completamente in forno spento, e, successivamente, conservare in frigorifero, meglio per un’ intera notte. Servire con una manciata di more o lamponi freschi.
