Caprese al limone
(per 8-10 persone)
3 uova
250 gr di zucchero semolato
250 gr di mandorle spellate
2 limoni bio (la buccia)
150 gr di burro
1 cucchiaio (raso) di farina
1 cucchiaino di lievito per dolci
1 pizzico di sale
1 tazzina di limoncello
Per la glassa:
80 gr di zucchero a velo vanigliato
2 limoni (il succo)
2 cucchiai di limoncello
Tostare le mandorle in forno caldo per una decina di minuti, quindi frullarle molto finemente. Montare a lungo le uova con lo zucchero semolato ed un pizzico di sale: deve risultare un composto gonfio e sodo. Con una frusta a mano, unire delicatamente la farina di mandorle, il burro fuso e freddo, la farina setacciata con il lievito e le scorze grattugiate dei limoni: procedere con movimenti dal basso verso l’alto per non smontare il composto. A questo punto, aggiungere il limoncello. Imburrare e cospargere di pangrattato una teglia apribile da 24-26 cm, versarvi il composto e cuocere a 180 gradi per 30 minuti. Per la glassa, spremere i 2 limoni, filtrarne il succo e addolcire con lo zucchero a velo ed il limoncello. Dopo i 30 minuti di cottura (anche se vi sembra ancora un po’ umida, non abbiate timore a sfornarla), estrarre la torta dal forno, bucherellarne interamente la superficie con uno stuzzicadenti e bagnare completamente con il succo di limone zuccherato, aiutandosi con un cucchiaio in modo da distribuirlo omogeneamente sull’ intera superficie. Lasciarla nello stampo fino al completo raffreddamento, quindi, sformare eliminando la cerniera laterale e conservare al fresco.
